A flavorful slow-braised beef roast coated in a tangy cranberry balsamic glaze.

  • 3 pounds beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 onions, chopped
  • 2 cups beef broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large pot, heat olive oil over medium heat.
  3. Season the beef roast with salt and pepper, then brown on all sides.
  4. Add minced garlic and chopped onions, cooking until softened.
  5. Pour in cranberry juice and balsamic vinegar, stirring to combine.
  6. Stir in brown sugar and beef broth.
  7. Cover and transfer the pot to the oven. Cook for 3 hours or until tender.
  8. Remove the roast from the pot and let it rest.
  9. Reduce the sauce on the stovetop until thickened.
  10. Slice the roast and serve with the glaze.

  • Using a meat thermometer ensures the roast is cooked to the right temperature.
  • For added flavor, marinate the beef overnight.
