1 cup heavy cream
2 cups granulated sugar
1/2 cup unsalted butter
1 teaspoon sea salt
12 ounces semi-sweet chocolate, chopped
1 teaspoon vanilla extract
Cocoa powder, for dusting
Instructions
In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
In another saucepan, combine the sugar and butter and cook over medium heat, stirring until the sugar dissolves and the mixture turns a light amber color.
Remove from heat and carefully add the hot cream, stirring continuously until well combined.
Stir in the sea salt, chocolate, and vanilla until smooth and glossy.
Pour the mixture into a greased dish and let it cool at room temperature until set.
Once set, scoop the mixture into small balls and roll them in cocoa powder.
Store in the refrigerator until ready to serve.
