A delicious and satisfying dish combining the earthiness of pumpkin and mushrooms with the crunch of crispy turkey bacon.

Ingredients

  • 8 ounces spaghetti
  • 1 cup pumpkin puree
  • 1 cup mushrooms, sliced
  • 4 slices crispy turkey bacon, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add the chopped turkey bacon and cook until crispy.
  4. Add the mushrooms and cook until softened, about 5 minutes.
  5. Stir in the pumpkin puree, salt, black pepper, and Italian seasoning. Cook for another 3 minutes.
  6. Toss in the cooked spaghetti and mix well.
  7. Serve hot, topped with grated Parmesan cheese.
