  • 1 rotisserie chicken shredded
  • 4 slices turkey bacon
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy; remove and crumble.
  2. Add onions and garlic to the pot, sauté until onions are translucent.
  3. Add sliced mushrooms and cook until soft.
  4. Pour in chicken broth, add shredded rotisserie chicken, thyme, salt, and pepper; bring to a simmer.
  5. Stir in heavy cream and let it heat through.
