- 1 pound ground beef
- 1 cup long-grain rice
- 2 cups beef broth
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and add ground beef.
- Cook until browned, then drain excess fat.
- Add rice, beef broth, diced tomatoes, garlic powder, onion powder, salt, and pepper. Stir well.
- Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
- Stir in half of the cheddar cheese.
- Transfer the mixture to a casserole dish and top with remaining cheese.
- Bake for 15 minutes until cheese is melted and bubbly.
