Ingredients

  • 1 pound ground beef
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat and add ground beef.
  3. Cook until browned, then drain excess fat.
  4. Add rice, beef broth, diced tomatoes, garlic powder, onion powder, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  6. Stir in half of the cheddar cheese.
  7. Transfer the mixture to a casserole dish and top with remaining cheese.
  8. Bake for 15 minutes until cheese is melted and bubbly.

Notes

  • For extra flavor, you can add your favorite spices.
  • Feel free to substitute ground turkey or chicken for a lighter option.
