Ingredients

  • 2 tablespoons ginger, minced
  • 4 scallions, chopped
  • 4 cups chicken broth
  • 2 cups water
  • 8 ounces egg noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • Salt to taste

Instructions

  1. In a pot, combine chicken thighs, ginger, and scallions with chicken broth and water. Bring to a boil.
  2. Reduce heat and let simmer for 20 minutes.
  3. Remove chicken, shred it, and return to the pot.
  4. Add the egg noodles and cook until tender.
  5. Stir in soy sauce, sesame oil, and season with black pepper and salt.
  6. Serve hot, garnished with extra scallions if desired.
